Arugula, also called rocket or roquette, is a green, leafy Mediterranean plant used for soups and salads. Like most salad greens, Arugula is very low in calories and is high in vitamins A and C. A 1/2 cup serving is equivalent two calories. Antioxidant-rich Arugula Soup is just as good serve as it is hot.
