Collards With Red Onions
The cuisine referred to as “soul food” originated in the kitchens of African-American slaves in the late 1800s. Soul food recipes typically called for ingredients that are indigenous to Africa and were often found on American plantations. Dishes such as fried chicken, bread pudding, Hoppin’ John, greens and “potlikker,” catfish, and hushpuppies are worthy (and tasty) representatives of African-American culinary.
Ingredients
  • 3 (16-oz.) packages fresh collard greens
  • 2 medium-size red onions, finely chopped
  • 2 tablespoons vegetable oil
  • 2 1/2 cups vegetable broth
  • 1/4 cup cider vinegar
  • 2 tablespoons dark brown sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dried crushed red pepper
